The Story of Lushice
I bought an ice cream maker in the summer holidays a few years ago and decided to see what dairy-free frozen dessert I could whip up as a frozen treat to take to a friend’s house for dinner.
When I started thinking about flavour combinations, the inspiration was easy. Cocktails taste good enough to eat and people mostly enjoy cocktails when spending time with their friends, so why not create the taste of a yummy cocktail, in the shape a refreshing frozen dessert.
Adding a splash of alcohol to the mix was a last minute addition, but I loved the idea of making it a little naughty and also found the alcohol gave the sorbet a smoother consistency especially when combined with quality fruit juices and purees.
The ultimate test was seeing what my family and friends thought. And what excited them the most was the idea of enjoying a frozen treat that was full of flavour and just for grown-ups.
